DESCRIPTION
Taleggio is a semi-soft, washed-rind, smear-ripened, Italian cheese that is named after Val Taleggio. This typical table cheese has a thin crust and a strong aroma, but its flavor is sweet and delicate with an unusual fruity tang.
USAGE
Ideal for use in cooking to season gnocchi, crepes, or a plate of polenta. Also excellent at the end of a meal, and becomes a very popular dish if accompanied by onion jam, pumpkin jam, or a compote of figs and walnuts.
