DESCRIPTION
“Idiazabal is a hard, Basque, artisanal cheese from northwest Spain in the Navarre region. Aged for 3 to 9 months, it is pale yellow in colour with a nutty, slightly oily texture. The cheese was originally stored in mountain huts and the smoke from the fires often permeated the cheese giving it its pronounced flavour.

Idiazabal makes a great, unusual addition to any cheeseboard. It makes a great sauce to go with steak or can be used to stuff baked peppers.
